On the drive home, we stopped in Wasilla at around 2:30 am for groceries. I was in la-la land, but managed to overflow a cart with produce. Unbeknownst to me at the time, I somehow purchased everything I would need to make Lasagna Magnifica from Delightfully Raw. Under normal conditions, this dish would have intimidated me, but how could I not try it when I had all the ingredients at my beck and call, including this lovely live basil:
The lasagna layer ingredients were surprisingly easy to assemble. I used the blender four times, not even washing it in between. The only hard part involved the zuke noodles, as I don't have a good mandolin to create thin strips. When I tried to spread the Not Meat the zukes were squirming all over the place. Tricky. The resulting dish was not particularly pretty, but it tastes epic! TH gave the lasagna 5 out of 5 stars!
