I happened to think it was delightfully tangy, but TH declared it wasn't decadent enough for him. He finished one with minimal help from me, so it couldn't have been that bad. Here's how I made it, in case you are interested in a tart tart.
Coconut Crust
Soak three dates in a 1/2 cup measuring cup filled with water.
When softened, blend (or food process) the dates and the soak water with:
1 cup coconut
a pinch of salt
Pat crust into tart pans.
Key Lime Filling
½ cup coconut
1 ½ cup coconut water
2 small avocados
1 ripe banana
2 tbsp irish moss gel
3 limes juiced + 1 tbsp lime zest
1 tsp vanilla
pinch of salt
½ tsp spirulina (optional; for color)
3 tbsp coconut palm sugar (or other sweetener of choice)
¼ cup melted coconut oil
For my favorite part, the whipped cream, I altered the Almond Cream recipe from Delightfully Raw (skipped the almond extract and subbed mac nuts for cashews). I'm glad the recipe made a large amount because I ate a lot straight out of Viv.

yum, i made lemon tarts and john said the same thing. i guess adding a wee bit more sweetener would remedy that. thanks for sharing the recipe - it looks great!

There's always a fine line toward blender licking, especially with our water situation. I have an invisible line so that I can't do it if I'm making something for others, but if not, my finger is my spatula...

Looks great! I went to a raw food prep class a few weeks ago and she made a lemon pie that I am going to try but I will use my key lime juice I froze, from our key lime tree. She didn't use any thickening agent so I will probably use chia. My Irish moss is in flakes and just doesn't work well. I need to buy a different batch of moss.
