Road Food

I've been away from home for the past several weekends.  Extended time away from mi casa used to throw my meal plans into a tailspin.  I initially thought that going raw would prove equally tricky for travel.  I have to admit that it's actually a lot easier than other diets that I've followed in the past.  I eat what I want, when I want, and don't have to worry about portions or plans or food combinations.  It feels really good.  That being said, I did do a little snack prep for my trip to Fairbanks.

Nori Crisps
Raw nori sheets, cut into squares, covered with Annie's Goddess Dressing Knockoff by yasi, and dehydrated.

Sunflower Pate
a super easy, delicious recipe from Delightfully Raw

Raw Granola Bars
Made from:
shredded apples
shredded pears
soaked buckwheat, sunflower seeds and brazil nuts
dried blueberries
dried coconut
a little coconut nectar
I need to tweak this recipe a bit before posting it in its entirety.

I forgot to bring my camera to Fairbanks, so I can't show you my beautiful weekend with family and friends.  I am super excited to share that we now have green leaves!  When our leaves finally pop out they are a fantastic, lime green.  This picture doesn't quite capture the bright energy the leaves produce.

I have three more days until school is out and the ultimate freedom begins!  :)

Question:  How do you plan to spend your summer?  Do you ever worry that it will be over too fast?

  1. I'd love to see your granola bar recipe when it's ready! That's just the kind of thing that I want to make when I get my dehy--more for Phil than me, but still.

My summer--we're going to have a series of visitors and I'm going down to Tacoma in August for my MFA program. Plus some other writing things, another trip to OR next month, going across the bay, hiking, gardening--should go by pretty fast!

One question for you: I love the ease that you describe in eating this way: do you ever feel self-conscious about eating other and at different times from other people?

  2. Hey Ela! Your summer sounds BUSY, but wonderful.

Great question. Up in Fairbanks, my friends and family know me well enough that they never bat an eye when I pull out sunflower pate or kale chips. (I've been experimenting with nutrition for many years.) When I go out to eat with others I can usually find a salad to eat, so I guess that isn't too weird. Overall, I would have to say that I feel way less self-conscious about my food choices than when I was eating more of a body builder type diet. And I get way more excited about eating than I used to.

    What about you?

  3. beautiful bars!! You are so good.
    Peace and Raw Health,

  4. What a great bar you made!!
I still have 3 weeks of work left to do with the kids. You are lucky your school is out.
    Peace and Raw Health,

  5. Hey kt--belatedly came back to check on your comments here!

That's great that you feel relatively un-self-conscious eating publicly. I guess I asked because it is still something that I struggle with on occasion, and definitely provokes some anxiety when I go into new situations/meet new people. But it was an issue pre-raw too, and probably having had an ED relates to it as well.
