Mistake...Or Not?

Sunday afternoon I was excited because I finally had time to try out one of the coconut products that had arrived from The Raw Food World.



I wanted sweet, so I decided to use the coconut nectar in a strawberry freezer treat.  I made the strawberry recipe below and froze it.




After a few hours the texture was not what I wanted, so I thawed it and decided it would make a lovely frosting.  Then I had to come up with a cupcake recipe.  Most of you probably know that raw cupcakes are nothing like baked cupcakes, but they can still be fun!  The recipes below are heavy in nuts and coco oil, so they are rather high in calories and fat, but I only eat one or two little minis and feel satisfied.  This batch of cupcakes will last a while.


Maca Cupcakes
2 cups walnuts
3 dates, soaked and then blended with 1 tbsp water to form a paste
2 heaping tbsp maca
dash of vanilla
dash of salt

Process the above ingredients in a FP until the batter is smooth and rolling into a big ball. Roll into small balls and put in mini cupcake liners.

Strawberry Frosting
1 pint strawberries
1/2 cup melted coconut oil
2 tbsp coconut nectar (or other sweetener)
dash of vanilla
dash of salt

Blend the above ingredients until smooth and creamy.  Harden in the fridge for a bit before spreading on cupcakes.  Decorate with whatever ingredients you have on hand. 






Question:  Are you a counting calories fan, or do you just eat when you are hungry?

  1. I have had some issues with the nectar's texture. It doesn't work well in chocolate for me (which is usually frozen too).

    I counted calories once when I was a teenager and it seemed disordered at that time. There's been a few times where I've counted calories on a raw diet, like in the beginning to make sure I was eating enough. But things I eat are often all mixed up so it would be hard to figure out calories, and I'm bad at math too.

  2. Thanks for the tip about the coconut nectar, bitt. That's too bad, as I really like its flavor.

    I agree about counting calories. It seems so hard and time consuming. I have a few friends who use apps to count for them, but even that seems tricky when you are eating raw mixed-up foods that most programs wouldn't register. I've been trying to listen carefully to my body as to when are what to eat.

  3. i still need to try coconut nectar/aminos/vinegar and raw cupcakes!

    i tried counting calories once when i was about 25 pounds heavier then i am now. it was kind of fun and helped me limit my meal portions but i still snacked like crazy. i think i actually gained a little weight doing it because i was thinking about food even more than usual!=)

  4. Thanks for sharing the recipe--I'm looking forward to playing with coconut nectar some more, and I like the aminos.

    I used to count calories obsessively, to the point that I couldn't eat a piece of food without putting it on a scale first. But this is when I was anorexic and it was very sad. Nowadays, I make a conscious effort not to count...

  5. Those little cupcakes are so pretty! No, I'm not a calorie counter. I think listening to your body and trusting what it tells you is the way to go.

    Hi Kelli! I'm loving the coconut treats. I wasn't sure what to expect, but they are really fun.

    I think I would obsess about food if I counted calories. I'm already slightly obsessed, but maybe in a good way...?

    I don't count calories either- I don't think I could remotely guess how many I consume in a day.
