Pizza Salad

Okay, this is probably not revolutionary, but it made my day.  TH was having raw pizza for dinner last night.  (It makes me so happy that he loves raw pizza!)  


I was trying to decide what to make for my lunch the next day when it hit me- raw pizza salad! 

I started with a bowl of zucchini noodles.


Then I added a mound of kale, chopped and marinated in a little EVOO, ACV, and sea salt.


Carmella's tomato sauce from Delightfully Raw came next.  (I love that stuff.)


Viv had previously blended some cheeze for TH's pizza so I added a bit of that, along with some olives. 

Macadamia Nut Cheeze
1 cup macadamia nuts
juice of 1 squeezed lemon
1/2 tsp sea salt
1/4 cup nutritional yeast
1/2 cup water

Blend until smooth, adding more water if necessary.


It was such a delicious lunch!  I'm so glad I have enough ingredients to make more for tomorrow. 

Question:  Do you make actual salad recipes, or just toss together whatever veggies/fruits you have available?  (I tend to ignore the salad sections in recipe books.  Maybe I shouldn't...?)

  1. I'm definitely a toss-it-together person, salad and most other things, I guess! But I do browse recipes and get ideas from them about specific pairings and textures. And the mango salad in Everyday Raw Food (which I had on interlibrary loan over the holidays) was quite a revelation.

    Ela, I also love browsing recipe books for ideas. I have to go look at the mango salad in Everyday Raw. It's awesome that your library had that book.

  5. That looks sooooooo good!
    I have 4 zucchini right now and not much else, have no idea what I will throw together to eat tomorrow with that??? Bummer. I will have to get really creative and raid the herb garden and toss in the two tomatoes I have as well. But now what to do for a sauce???
    I guess I am answering your salad question by my rambling.
