Moose Moment

I feel so lucky to have had so much time at home in the daylight this week!  I start to miss our mountains when I'm only home in the dark.



Just when I thought the day couldn't get any more beautiful, I spied some visitors out the window.




This little lady and I were sharing a special moment of unbreakable eye contact when Big Daddy interrupted, encouraging everyone to scamper down the hill.   

You are so cute, in a weird way.

I'm actually glad the bull showed up because I might still be involved in a stare off and I wouldn't have whipped up the persimmon mousse portion of Persimmon and Coconut Cream Parfait.  This is so easy and delicious- try it!!

I plan to make more of these later.  


Now I need to eat my post P90X snack and gear up for a brisk walk with my wonderful neighbor.

Question:  Any other P90Xers out there?  I just finished week four (the lovely low key week with all my fave workouts) and took pictures today (as directed by my BFF Tony Horton).  I'm pretty pleased.  Any one else have an opinion on the program?

Well, I didn't mention it earlier, because I keep noting all of the things we have in common and sometimes that can be annoying, but I did do a little stint with Tony (I can't say P90X without crossing my arms into and X in front of me). Some of the P90X irritated old injuries so I had to be careful and really feel it out. I liked it, but I find that regular walking and pilates does the trick for me. I think it's a great thing if you can do it--just be careful not to overdo it!

    And how lucky are you to have such wonderful creatures on your doorstep, not to mention the incredible view. Do you have room for visitors??? ;)

    As for the parfait, love that you made it, as I was about to make one myself this week (actually was going to recreate a recipe I developed for my breakfast assessment at culinary school) which was very similar to yours. Now you've inspired me to really do it now. Your's looks delicious.

  3. I'm so jealous that you were able to attend culinary school! I would love to have that experience. I am such a wimp about creating my own recipes as quality ingredients are so hard to come by here, and I would love the chance to experiment with a stocked kitchen.

    I can't wait to see a picture of your parfait! :)
