Home Raw Home

After two days of madness, we arrived home at 4:00 am this morning.  (We tried to leave Zihuatanejo at 11:00 am AK time on Saturday).  As many of you know, airplanes and airports are not raw friendly environments.  I was stoked to get home and get busy in the kitchen!

On the drive home, we stopped in Wasilla at around 2:30 am for groceries.  I was in la-la land, but managed to overflow a cart with produce.  Unbeknownst to me at the time, I somehow purchased everything I would need to make Lasagna Magnifica from Delightfully Raw.  Under normal conditions, this dish would have intimidated me, but how could I not try it when I had all the ingredients at my beck and call, including this lovely live basil:


The lasagna layer ingredients were surprisingly easy to assemble.  I used the blender four times, not even washing it in between.  The only hard part involved the zuke noodles, as I don't have a good mandolin to create thin strips.  When I tried to spread the Not Meat the zukes were squirming all over the place.  Tricky.  The resulting dish was not particularly pretty, but it tastes epic!  TH gave the lasagna 5 out of 5 stars!  

Don't be scared!  Try me!

Question:  Do you grow your own herbs? I used to, but the pots gave birth to millions of pesky little gnats.  Anyone had that happen before?

  1. haha! "Pesky" is a total understatement! I had a little planter inside last summer; basil, lavender - whatevs, it was stuff I wanted to eat, but NOT at the expense of my blood (did you know those little gnats, no-see-ums, whatever you want to call them, are little bloodsuckers?) I nearly went insane before bombing the heck out of the house several times to be rid of them. I hope that wasn't your experience! The lasagna looks spectacular!

  2. Welcome home! Do you notice that it's already getting lighter?

    So cool that you managed to make such beautiful things so soon after getting back.

    I got a mandolin for $20 from amazon--works great and I love it. Brand is 'benriner' (Japanese) an easy fix.

    I love growing my own herbs as much as poss--pesky gnats notwithstanding!

    Awesome that your parents grew such a great garden. I was in Fbx a couple weeks this summer and was so impressed with what can be grown up there.

    Hi Ela! Yes, I am so pleased about the additional light. I do miss waking up with the sun, though. Thanks so much for the mandolin tip. I miss my indoor herbs, maybe TH will let me have another go at it.

    I have been eying that lasagna. I already told myself it is down the list. I need to master a few others first.
    Question on D. I borrowed a D from a friend but it just isn't working. I think I am going to make the investment and get one. Do you like D? What brand? Thanks.

  6. Oh CC, you have to try the lasagna. It's legit. About the D: my first was an old Excalibur purchased off Craig's List and it was a hot (actually lukewarm) mess. It took eons to dehydrate and sounded like Megadeath. I bucked up and bought the Excalibur 3900 9-tray. I adore it, almost as much as Viv. Hmmm, that reminds me, he needs a name! (They are on sale for $219.95 at excaliburdehydrator.com.)

  7. Thanks Kt. I ordered a smaller version of the one you have. It is 5 trays. I hope it will be enough. I just couldn't do the $200+. I hope the smaller version will work for me. I have 30 days to return it so who knows maybe an upgrade will be in my future.
